For the love of Bacon

Unlike some of the T.V. personalities out there, I am not against the vegetarian life style, I just know it isn't for me! Don't get me wrong I enjoy fruits and vegetables very much , but I know that since I have been eating meat for more then 35 years I am rather fond of it. I also think that if I was a full blown street level heroin addict, I could more easily give that up long before bacon or a steak!   I once spoke to a guy that went through some tough times and decided to go back to the basics. Back so far as to swear himself to celibacy, become clean in all aspects of controlled substances, stop drinking, smoking, and become a vegetarian. About a full year into it I asked him,”What do you miss the most if anything?” He replied " The smell of bacon brings back more memories then any porno movie could, and makes me want to jump off the wagon not just fall!".  I was a little in awe but I can totally relate. Having a lot of my cooking experience come from southern roots, bacon play's a huge role in most of my personal recipes, and a great deal of what I learned growing up cooking with my mother.   You can use bacon and bacon grease in every dish except dessert and sometime I think that if you put a little maple syrup on your bacon you could call it dessert, like when you have pancakes or waffles and a some syrup runs over to the bacon side of the plate, ah heaven. lol   I use bacon as a topping for salad, I add it to my egg salad for sandwiches, we put it in our deviled eggs. Bacon goes in our baked beans, on sandwich's, burger's, and believe it or not, next to our egg's in the morning. I wrap boneless skinless chicken breast in bacon and throw it on the grill or in a shallow frying pan to add just a little flavor to the worst cut of meat you can buy, and as many of you might have done or at least seen recipes for, I wrap a fillet steak, big shrimp or even scallops with bacon and grill them.   I could go on and on with all the different ways you can use bacon, but if it hasn't already, it'll get boring real soon.  One last idea for a use of bacon is :  take 1 lb of  fresh green beans, 1/2 a medium onion sliced or diced, 1 cup of chicken stock, 1/2 lb of bacon   about 6 or 8 small red potatoes cut into halves   salt and pepper to taste  in a medium skillet cut the bacon strips into 1/2 inch piece's and saute` them in a pan until crispy, add the onion and cook until soft, add the chicken stock and the potatoes cut into halves cook about 10 minutes at a boil then, add the green beans and cook covered for about 10 more minutes. Taste then add salt and pepper to taste.   Once you have added the seasoning to your taste remove the lid and continue to cook over medium heat for about 10 more minutes then enjoy !
