Asian inspired slaw


1/2 head of cabbage about 2 1/2 cups chopped

1/2 cup sliced onion. the sweeter the better

1/4 cup olive oil

3 tbls rice viniger

3 tbls sugar

1 tbls soy sauce

1 tbls creamy horsradish

1/2 tbls whole grain dijon mustard

1/2 tbls pickled ginger, minced (sushi ginger)

salt and pepper to taste


Chop cabbage, onion and ginger then mix together well in a medium bowl. Then in a different bowl add all wet ingredients and sugar except olive oil and whisk together. After these wet ingredients are combined slowly add the olive oil while still whisking to create a emulsion (becomes thick) so it will hang onto the cabbage and not only be in the bottom of the bowl. combine the contians of both bowls add salt and pepper to taste, cover allow to set for an hour or 2 then enjoy. Goes great with grilled seafood or chicken.
